Why Smoked Chicken?

My earliest memory of smoked chicken goes back to when I was about eight or nine years old. At the time, UTA — now part of Air France, would bring French delicacies to sell in Freetown, Sierra Leone, where I grew up.

I still remember biting into a smoked chicken leg and noticing that distinctive reddish colour inside. The taste was heavenly. Ever since, I’ve looked for that same flavour here in the UK. Although I’ve found smoked chicken, none quite captured the distinctive taste and nostalgia of those early experiences or the ones I enjoyed later on my travels to France.

This longing set me on a journey to create my own smoked chicken — one that honours those memories while adding my own twist with flavours like Chilli and Chilli & Ginger. I hope that as you read about this journey, and as you taste the final result, you experience a little of the same love I’ve always had for smoked chicken.
